For decades, medical professionals have documented cases of cheese mite dermatitis, commonly referred to as cheese itch. Caused by direct contact with microscopic mites that thrive on aged cheeses like hard cheddar, this skin condition causes severe itching and irritation. Although food regulators traditionally view these creatures as unwelcome pests, certain artisanal cheesemakers intentionally introduce specific mite species to develop distinct nutty, fruity flavours and aromas in rind-ripened cheeses.
Entomologists and dairy scientists classify these species using fine anatomical features, such as the arrangement of their anal suckers, ensuring that only non-toxic strains are used during the maturation process.
While mite-ripened cheeses may seem unusual, other traditional regional practices involve far more hazardous organisms, particularly the larvae of the cheese fly, Piophila casei. Commonly known as cheese skippers, these maggots obtain their name from their ability to launch themselves up to 15 cm into the air when disturbed.
Historically, the presence of these maggots was viewed in some European rural communities as a sign of proper ageing and rich flavour. The most famous example is casu marzu, a traditional Sardinian sheep’s milk cheese deliberately infested with thousands of live cheese fly larvae to break down milk fats and create an exceptionally soft, pungent texture.
However, modern medical research highlights significant health hazards associated with consuming maggot-infested foods. When eaten live, cheese fly larvae can survive the acidic environment of the human stomach and pass into the intestinal tract. This can cause severe intestinal myiasis, an infection characterised by abdominal pain, nausea, vomiting, bloody diarrhoea, and potential bowel perforation.
Furthermore, rare medical reports have documented urinary tract infections and skin allergies resulting from accidental exposure to these fly larvae. Due to these serious health risks, food safety authorities, including the European Food Safety Authority, have banned the commercial sale and distribution of casu marzu and similar insect-infested dairy products.
In India, traditional dairy consumption looks quite different, as indigenous cheeses like paneer and chhena are consumed fresh rather than long-aged. Because these fresh curd products do not undergo months of open-air fermentation or surface mold maturation, issues related to intentional mite infestation or maggot-driven ripening do not exist in traditional Indian cheesemaking.
Nevertheless, India faces its own distinct food safety challenges concerning insect contamination and improper storage of dairy products. In warm, humid climates, poorly stored dairy goods, sweets, and milk solids can quickly attract filth flies, houseflies, and storage mites. Unhygienic handling and inadequate refrigeration create ideal breeding conditions for insect pests, which can transmit pathogenic bacteria like Escherichia coli and Salmonella to consumers.
To combat these contamination risks, the Food Safety and Standards Authority of India enforces strict hygiene standards across dairy supply chains. Public health campaigns emphasise the necessity of cold-chain maintenance, proper packaging, and clean processing facilities. By ensuring that milk products remain free from pests and harmful micro-organisms, Indian health authorities aim to protect consumers from foodborne infections and intestinal parasites.
